Sorry that it’s taken so long to get this posted, but you know how it is sometimes, just not enough hours in a day. Anyway, as the old saying goes, ‘Better late than never!’
The eagle eyed, and Solid Rock Cafe’s Mud pie fans, (my mind instantly goes to Jade, John & George Scott), will no doubt notice that this pie is a little more indulgent than the one at Solid Rock, and you’d be correct. The reason being, in the cafe we stretched out the recipe to make it more cost effective. (Bugger the customer, it’s all about the money, money, money! Not really, you all know that we loved you and that we were only looking after your waistlines!) If you wanted to cut calories though, you could half the pie filling ingredients, but use the same base and topping. You’d also have to cut down the baking time from 40 to around 25mins.
Pre heat oven 160 fan
23inch flan dish, I don’t have one here, so I lined a cake tin and it worked fine.
For the base:
16 digestive biscuits, give or take one or two
3oz melted butter
Place digestives and melted butter in a food processor and blitz until it looks like damp sand. Spoon into a flan dish and flatten down with the back of a large dessert spoon.
Mud pie filling:
8oz melted butter (cooled)
2 cups sugar
1 Cup plain flour
4 heaped tbs coco (I use Cadbury’s Bournville)
dash of vanilla essence
Place all of the ingredients in a food processor and blitz until it all comes together. Pour on to the biscuit base and place in the middle of the pre-heated oven. Bake for 40 mins. Remove and leave to cool.
6oz Icing Sugar
A splash of Vanilla essence
Run a vegetable peeler down the long side of a bar of chilled chocolate. I find that milk chocolate works best, do this until you have the desired effect.
Now all that’s left to do, is put the kettle on and slice yourself a nice wedge of pie. P.S. If this isn’t indulgent enough, you can place a slice of pie in the microwave for 30seconds and serve it with a dollop of your favourite ice-cream, pouring cream or custard, or as Lovely Adrian would do, have them all!
